Food Standards Australia New Zealand (FSANZ) is calling for comment on an application to permit the use of the enzyme aminopeptidase Y as a processing aid.
Aminopeptidase Y (EC 3.4.11.6) is an enzyme made using a fungus called Trichoderma reesei. This fungus has been modified to include a gene from another fungus, Aspergillus clavatus, so it can produce the enzyme.
The application seeks approval to use aminopeptidase Y for protein and yeast processing and flavour production.
Our safety assessment found no public health or safety concerns associated with the proposed use of the enzyme.
